Banana Cake with Buttercream Icing is probably the best thing I’ve discovered on the internet since Salted Caramel Brownies and Suri’s Burn Book. Banana cake is one of my favourites. Along with carrot, apple, gooseberry, lemon, and chocolate. In fact I just really like cake. However, Banana Cake was also the very first cake I made that came out tasting delicious…I was 19 at the time. I always assumed it was just a fluke that it came out tasting so good, so I decided to try it again.

The banana cake itself is really easy to make, and little did I know, but the buttercream icing is even easier!
Banana Cake with Buttercream Icing Recipe

For the ingredients you will need;

Banana Cake Ingredients

3 Ripe Bananas
250g Full Fat Greek Yoghurt
300g Golden Caster Sugar
250g Plain Flour
120g Unsalted Butter
2 tsp. Vanilla Essence
1 tsp. Baking Powder

Vanilla Buttercream Frosting Ingredients

150g Unsalted Butter
500g Icing Sugar
3 tbsp. Milk
1 tsp. Vanilla Essence

Banana Cake Recipe

Get a large mixing bowl, and cream the 300g of golden caster sugar and 120g of unsalted butter together. Then mix in the 250g of full fat Greek yoghurt, and add the 2 eggs. Mix it all together until it’s creamy.
Next get your three bananas and put them into a separate bowl, mash them all up with a fork until they’re all clumpy and slightly smooth, and then mix them into the mixture along with the 2 tsp of vanilla essence.
Then add the 250g of plain flour and 1 tsp of baking powder, and stir.
Pre-heat the oven to 185°C, then grease a square pan and pour the batter into it. Spread it evenly, and then bake for 25 minutes or until the cake goes a light/golden brown.

Buttercream Icing Recipe

For the buttercream icing all you need to do is heat the 150g of unsalted butter in a saucepan on a medium-low heat. Be careful not to burn the butter. When the butter has completely melted and starts to boil take it off the heat and set it on the side.
Add the 500g of icing sugar, but don’t put it all in at once. Add it a little bit at a time, stirring it into the butter so it thickens. Depending on how you want your icing, you may want to add all the icing sugar so it’s nice and thick, or you may add less so it’s slightly runnier.
Then add in the 3 tbsp. of milk and 1 tsp. of vanilla essence and stir. Your icing should now be nice and thick. Leave it on the side until your cake is ready. When it’s ready take it out of the oven, leave it to cool a little, and when it’s still slightly warm spread the icing over the cake.

Then cut, and serve! And there you have it, a deliciously moist Banana Cake with Buttercream Icing! Perfect for Sunday afternoon’s or tea parties.

    I'm so picky about bananas (they have to be not too ripe but not too green) that I rarely buy them, I totally should so that I could use the leftover ones for cake, though.
