Easy Australian Lamington Recipe.

Happy Australia Day all! 

As many of you know from all of my Australia posts, I lived there for a couple of years and went to school out there, and it was literally the best time of my life. It's such an incredible place, and I feel so blessed to have been given such an amazing experience by my parents. As well as the beautiful beaches, ocean, wildlife, people, and scenery, there is also the food. One of my favourites was Lamingtons. Sponge cake covered in chocolate icing and coconut, they are so delicious! So I thought I'd make them for you all and give you the recipe!

Ok I lie. It isn't really a 'real' recipe, it's more of a tutorial for people who can't cook on how to make them by cheating. I can't cook plain sponge cake to save my life, and as this is an integral part of Lamingtons, I have to cheat a little. 

- Small individual sponge cakes, or a large sponge cake.
- Chocolate Icing (either normal icing or butter icing)
- Dessicated Coconut

Personally I cheat the entire way and buy sponge cake and Betty Crocker's chocolate butter icing, but if you're a dab hand in the kitchen feel free to make these things from scratch!

Start by pouring the coconut into a bowl, then put to the side for later.

 Then if you have a large sponge cake, cut it up into smallish chunks.

If you have thick butter icing rather than normal 'runny' icing, put it into a large bowl, then put it in the microwave for 20 seconds until it's runny...if you don't, your cake will look like this. Which we don't want, we want it to go on thinly and smoothly. So then you can either get a knife and spread the icing onto each chunk of cake, or you can just dip the chunks into the bowl.

Then once your piece of cake is covered in chocolate icing, put it into the bowl of coconut and roll it around until it's covered.

This is one of the messiest things you will ever make. But it's the perfect excuse to lick your fingers!

Ta-da! A perfectly delicious Lamington!

Leave them to set, or put them into the fridge and eat the next day (this is the best way!). And then scoff them all! Or share...whatever's your thang.

It only takes a couple of minutes to make each one, and they're almost as good as the Aussie ones from Baker's Delight (my favourite bakery ever)! Also some people like jam in their Lamingtons, but I don't, which is why I just use plain sponge. Tip: Lamingtons also taste amazing with vanilla ice-cream!   2. I'm going to Aus next week to see if it's somewhere I'd move to. I'm going to Melbourne because I think that'd be better for me. Where did you live?

    1. I lived in Perth, in Western Australia. Melbourne is perfect if you're a city girl who loves a big city and shopping - Melbs has amazing shops! But if you're a beach laid-back girl you'll need to head West. Perth is basically an oversized town, the 'City' is only two streets long and most of it is actually the CBD. They also have some of the best beaches in the World there :)

  3. These sound so good! I'll have to give them a go! :) I'm not such a fan of chocolate frosting though, can you substitute it for a different flavour?

    1. They are scrumptious! Definitely try them! I don't see why not, they'd taste different but I don't see why you can't use vanilla instead?

  5. OMG I love Lamingtons after discovering them when we were in Noosa. I will definitely try this recipe especially as it is the 'cheats' guide, my idea of baking!

  6. i've always wondered what a lamington was.. i'm still not 100% sure, but they sure do look good!! :)
